Classic Strawberry Galette

If you follow me on instagram, you must know by now how big of a strawberry lover I am. This year I experimented with so many new recipes and it has made me wonder why strawberries aren't available all year round... while finding inspirations and ideas, I stumbled on this beautiful French dessert. When I was making it, I realised how easy and simple yet elegant this dessert is. Oh and just fyi, I am munching on strawberries even while writing this post! ;)

I made this recipe sugar free. Actually there's really not much use of sugar here because the pie dough doesn't need sugar and the sugar in the compote can be easily replaced with jaggery.

I know I keep saying in every post how simple the recipe is, but they really are. I try to make my recipes as simple and easily understandable and at the same time easy to make and delishhhh!

Apologies for this one though, I got my perfect recipe in the first trial itself so I didn't really click a lot of demonstration pictures. I am including the ones I have. Now that the strawberry season is about to get over, here's a little tip :

To preserve your strawberries for a little longer, soak them in water with a little bit of baking soda for a few hours. Remove them, rinse, dry and store properly and use them as and when you like even after the season is over!

Let's get started :

  1. For the strawberry compote, you will need :

2. In a sauce pan, add the chopped strawberries.

3. Cook on medium flame until they leave some juices and then add jaggery, let it melt.

4. Let it cook until strawberries are mushy and the mixture starts to become liquid.

5. Now mix cornflour with water and add it to the mixture.

6. Keep mixing continuously until cornflour dissolves well and then let it thicken. Then add the lemon juice.

7. Cook until this consistency (sauce-like) and then set aside to cool.

8. Now for the pie dough, you will need :

9. In a bowl, add the cold butter, flour and salt. Rub with your palms until the butter is fully coated with the flour. It must attain a sandy texture.

10. Add the cold water and knead just until a dough is formed. Refrigerate for half an hour.

11. Once the dough is done, portion it and roll into a circle. Thickness can be of that of a roti.

12. Spoon a small portion of the compote.

13. Press the edges of the dough over the compote and pinch to seal.

14. Place on a baking tray. Apply a generous amount of egg wash.

15. Bake at 200 C for 30 minutes or until the crust is golden brown.

16. Let it cool.

STRAWBERRY GALETTE

Prep time : 30 minutes

Baking time : 30 minutes

Total time : 1 hour

Yield : 2 medium-sized and 3 mini galettes


Ingredients :

For the compote :

Chopped strawberries - 200 gm

Sugar / Jaggery - 25 gm

Cornflour - 1/2 tbsp

Lemon juice - 1/2 tbsp


For the pie crust :

Flour - 110 gm

Salt - 1/2 tsp

Cold butter - 35 gm

Chilled water - 50 ml


For the egg wash :

Mix one egg with 2 tbsp sugar.


Method :

For the compote -

  1. In a saucepan on a medium flame, add the chopped strawberries.

  2. Cook until they are mushy and start releasing juices.

  3. Add in the sugar/jaggery and melt.

  4. Cook until the mixture starts to become liquidy.

  5. Mix cornflour with some water, add it to the mixture and mix continuously until the cornflour dissolves.

  6. Add the lemon juice.

  7. Cook until a sauce-like consistency is achieved.

  8. Set aside to cool.

For the pie crust -

  1. In a bowl, add cold butter, flour and salt.

  2. Rub it with your palms until the butter is coated well with the flour.

  3. Now add the chilled water. Knead just until a dough is formed.

  4. Refrigerate for half an hour.

Assembling -

  1. Pre heat the oven at 200 C

  2. Remove the dough and portion it into desired numbers.

  3. Roll into a circle. Thickness should be that of a roti.

  4. Spoon a small portion of the compote in the centre of the dough.

  5. Now, press the edges of the dough over the compote and press to seal (as shown in pictures above).

  6. Place on baking tray and apply a generous amount of egg wash.

  7. Bake for 30 minutes or until the pie crust in golden brown.

  8. Let it cool.

  9. Your strawberry galletes are ready!
