Seviyaan Kheer


This has to be one of my most favourite Indian desserts. I remember visiting my parents during the holidays and my mum would already have packets of vermicelli ready at home to make kheer at least twice a week!

Kheer can be made with a lot of things like rice, makhani, carrot, badam, lauki and so many more. But for me, seviyaan aka vermicelli is the real deal. Most popularly prepared for special occasions and festivals this delicacy is also called sevai kheer, semiya kheer or seviyan payasam in the South. It is an amazing combination of vermicelli and milk and gets ready in under 15 minutes.

And now that mangoes are in season, toss in some chopped mangoes, nuts and enjoy!


So let's get started!

  1. For this recipe, you will need :


2. In a pan, add milk and let it come to a boil.


3. While the milk comes to a boil, take another pan and add ghee.


4. Add the vermicelli and roast.


5. Roast until they turn golden brown, crispy and are easily separated from each other.


6. Once the milk comes to a boil, add sugar. Give it a good mix.


7. Add condensed milk and mix well.


8. Once the condensed milk is mixed well, add it in the vermicelli.


9. Let the vermicelli cook in the milk. Keep stirring continuously.


10. After 5 to 10 minutes, check if the vermicelli is cooked and are easily seperated from each other.


11. You kheer is ready. Garnish with some nuts and enjoy!


SEVIYAAN KHEER


Time : 20 minutes

Yields : 4 portions


Ingredients :

Milk - 1/2 lt

Sugar - 1/2 cup

Condensed Milk - 200 gm (1/2 tin)

Ghee - 2 tbsp

Vermicelli/Seviyaan - 2/3 cup

Elaichi powder - 1 tsp (optional)

Nuts for garnishing (optional)


Method :

  1. In a pan, add milk. Let it come to a boil.

  2. In the meanwhile, in another pan, add ghee.

  3. Roast your vermicelli in the ghee until it turns golden brown, crispy and separates from one another.

  4. Once the milk comes to a boil, add sugar and give it a mix.

  5. Then add the condensed milk and mix well.

  6. Once this is done, add it in the vermicelli.

  7. Let the vermicelli cook in the milk. Keep stirring continuously.

  8. After 5-10 minutes, check if the vermicelli is cooked and is easily seperating from each other.

  9. Turn off the flame.

  10. Your seviyaan kheer is ready. Garnish with some chopped nuts and enjoy!
