Coffee bean cookies

I've been watching a lot of Gilmore Girls lately and I am in love with the show. I am totally a chai person but Lorelai and Rory have convinced me that you can never dislike a good cup of coffee. Its been a month since I've stopped having tea, that's the kind of influence those two girls have on me. When I was planning for my 'Desserts Inspired by TV shows' series (new episode on my instagram every Friday) I knew I had to do something very special for Gilmore Girls. While I was researching, I came across these coffee bean looking cookies on Pinterest and I had found the perfect match.
The recipe is very easy. I had to alter my basic cookies recipe a little bit here and there. I tried a lot of variations to make these eggless, but nothing really worked. I tried to eliminate the eggs from the recipe and make one but the dough was too hard to shape and batch came out like rocks. We couldn't even bite into it. The egg yolk make the cookies chewy and give them a moist texture.

I like my coffee strong so I've added 1 tablespoon instant coffee powder. If you want a mild coffee flavour, add around 1/2 tablespoon but nothing less than that. The recipe asks to add milk, but you can add water too as per your preference.
So, let's get started:
1. For this recipe, you will need :

2. Mix hot water/milk with instant coffee powder, set aside.

3. Mix all the dry ingredients together (flour, cocoa powder, corn flour).

4. In a bowl, add your softened butter and whisk for 2 minutes.

5. Now add the powdered sugar and whisk until creamy.

6. Add the egg yolk and whisk until well incorporated.


7. Add the coffee mixture and mix well.

8. Add in the dry ingredients and mix to form a dough.


9. Portion the dough into 8 gm (1/2 tablespoons) each and roll to form a coffee bean shape.

10. Now, with the back of a small knife make a cut halfway through the centre of the bean. Rest the coffee beans in the refrigerator for one hour.

11. Bake at 160 C for 12-15 minutes.

COFFEE BEAN COOKIES
Prep time : 20 minutes
Cooking time : 15 minutes
Total time : 35 minutes (+1 hour resting)
Yield : 40 cookies
Ingredients :
Coffee powder - 1 tbsp
Milk/ Water - 2 tsp
Flour - 1 cup
Cocoa powder - 2 tbsp
Corn flour - 5 tbsp
Softened butter - 1/3 cup
Powdered sugar - 7 tbsp
Egg yolk - 1 no
Method :
Mix hot water/milk with instant coffee powder and set aside.
Mix flour, cocoa powder and corn flour together and set aside.
In a bowl, add softened butter and whisk for 2 minutes.
Add the powdered sugar and whisk until creamy.
Add the egg yolk and whisk till combined.
Add in the coffee mixture and whisk.
Add the dry ingredients and combine to form a dough.
Portion the dough into 8 gm (1/2 tablespoon) and roll to form a bean shape.
Now, with the back of a knife cut halfway through the centre of the bean.
Rest in the refrigerator for an hour.
Pre heat oven at 160 C.
Bake for 12-15 minutes.
Let them cool and your coffee bean cookies are ready!
