Eggless Choco Chip Cookies



This has been one of the most highly requested recipes on the blog! I absolutely love cookies. More than eating, I love baking them. I usually have a box of rolled cookie dough lying in my refrigerator, you know for all the midnight cookie cravings.

My first few recipes on the blog was my go-to chocolate chip cookie recipe. A lot of you DM'ed me asking me for an egg-free version. Soooo, here it is! The recipe is very simple. All you have to do is the read the instructions carefully once, stick to the quantities and you're sorted.

I don't really have a lot of 'pro' tips (lol) for this recipe.

This recipe requires a lot of chilling the refrigerator. Because we have used melted butter, the dough will take time to set.

If you want to make chunky choco chip cookies, add an extra teaspoon of corn flour in the batter and reduce the quantity from the flour.

Make sure you bake one before dumping them all in the oven so that you have a clearer idea of the baking time, chunkiness and spread of the cookie.

Place the cookie dough apart from each other as they tend to spread a lot.

EGGLESS CHOCO CHIP COOKIES

Prep time : 15 mins

Baking time : 15 mins

Total time : 30 mins


Ingredients :

Powdered sugar - 1/4 cup

Brown sugar - 1/4 cup

Melted butter - 1/4 cup

Baking powder - 1 tsp

Water - 1 tbsp

Oil - 1/2 tsp

Vanilla extract - 1/2 tsp

Baking soda - 1/4 tsp

AP Flour (maida) - 90 gm

Corn flour - 2 tsp

Chopped chocolate - 100 gm


Method :

1. In a bowl, combine melted butter, powdered sugar and brown sugar. Mix till dissolved.

2. In a separate small bowl, add baking powder + water + oil. Mix well and add it into the melted butter and sugar mix. Add vanilla essence.

3. Sift maida, baking soda and corn flour together and add it into the mix.

4. Add chopped chocolate. Combine everything together. Do not over mix.

5. Place in the refrigerator for 30 mins or until it starts to hold shape.

6. Once it is hard enough to roll, portion into desired shape and size. Leave it to chill again for 30 mins.

7. In the meantime, pre heat your oven at 180 C.

8. Place the rolled cookie dough on a baking tray lined with parchment paper.

9. Bake for 12-15 mins.

10. Ready!
