The most amazing Brownies ever!

Hi! You have no idea how excited I am to be writing the first article for my blog. This is something I've been meaning to do for a while. When I decided to start writing, I knew I had to start with my most favourite dessert.
I've loved having brownies since I was a kid and I still dooo. It's my go-to dessert for a party. I haven't met anyone yet who doesn't love brownies and I don't know how I'd react if I met them. No seriously, do such people exist?
This brownies recipe is foolproof and trust me, nothing, I repeat, NOTHING can go wrong with this recipe. How much ever you try to screw it up, it's going to be absolutely delishhh! With the right quantity of ingredients and steps obviously. ;)
Just look at the crust, don't you wanna bake them already? I know I want to again after these shots!

This recipe contains eggs, but you can substitute eggs with homemade yogurt/curd. Substitute an egg with 60gm of yogurt. In the case of this recipe where we use two eggs, add 120gm.
So, I am someone who likes my brownies gooey and fudgy and if you do too, bake them for 30 mins and when you insert a skewer in the middle of the batter, it shouldn't come out clean. Let there be some batter on the skewer, some and not too much. It'll set later when you let your brownies cool.
Incase of cakey brownies, bake them for 35 mins or until a skewer inserted comes out clean.
I usually bake my brownies, open the oven door and let my brownies sit in the oven for about 10-15 minutes. Later, let them cool completely and only then demould them.

You know the best thing about these brownies? They taste absolutely amazing straight outta the refrigerator too! If you are as lazy as I am and don't like to heat your brownies and then wait for them to cool down so that you don't burn your tongue, this recipe is for you my friend! Or you can do it the classic way with hot brownies, vanilla ice cream and chocolate sauce. Aaah! I am drooling already.

So, let's begin with the recipe!
For this recipe, you will need:

2. In a pan, combine water and sugar together.

3. Cook on low flame until the sugar combines.

4. Add butter and mix until the butter melts.

5. Add chopped chocolate and melt.

6. Let cool completely.

7. Add eggs, one at a time and mix until just combined.


8. Sift in the dry ingredients and fold it in until just combined. Do not overmix.



9. Pour the batter in a greased tin lined with parchment paper.

10. Bake at 180 C for 30-35 minutes or until skewer inserted comes out clean.

11. Let it cool completely and demould.

BROWNIES
Prep time : 20 minutes
Cooking time : 35 minutes
Total time : 55 minutes
Yields : 16 medium sized brownies (Weighs 1kg)
Ingredients :
Water - 30 ml (2tbsp)
Sugar - 160 gm (1+1/4 cup)
Butter - 80 gm (1/3 cup)
Dark chocolate - 230 gm
Eggs - 2 nos or Curd - 120gm
Flour - 125 gm (1 cup)
Baking Powder - 1/2 tsp
Method:
Pre heat oven at 180 C/ 356 F.
In a pan, heat water and sugar until dissolved.
Add butter and melt.
Once butter is completely melted, add the chopped dark chocolate and mix well until chocolate melts.
Let the mixture cool completely.
Once cooled, add in the eggs, one at a time and mix well.
Sift the flour and baking powder and add it into the dry mix.
Fold it in until just combined, do not over mix.
Pour the batter into a greased tin lined with parchment paper.
Bake for 30-35 minutes or until skewer inserted comes out clean.
Let it cool completely and demould.
Your brownies are ready!

Enjoy these with a glass of milk or heat them, drizzle chocolate sauce and enjoy!
