Lazy Spaghetti in Fresh Tomato Sauce

I call this my lazy spaghetti because this is my go-to when I don't want to do the work but also want to eat really good food. Chalo, at least something came out of being lazy!
I made this recipe a few weeks ago, recorded the whole process and uploaded it on my stories. I got a great response from the stories and so many requests for exact quantities. This post has all the info to make this spaghetti.
Before going ahead with the recipe, I just want to put it out there that I used noodles instead of spaghetti pasta. I know! I am guilty! But I was really craving for some fresh tomato goodness and I told myself that no one has to know. I had no idea that I'd be writing the recipe down for y'all to make it. So, if you guys also have noodles at home and no spaghetti.. just use it and I won't tell anyone. I promise!
I had some mushrooms lying around in the fridge, so I used them but its totally upto you. I also added spinach because I personally love green vegetables, but that's optional too. Veggies or no veggies, you're going to love it!

For the mushrooms, in a pan, add butter, mushrooms, seasonings and cook. Follow the same method for any other vegetable. You can boil the veggies too.
To add spinach, once your tomato sauce is ready, add chopped spinach, cover and cook the sauce until the spinach wilts.
Add veggies or meat of your choice over the sauce while assembling the pasta.

Lazy Spaghetti in Fresh Tomato Sauce
Total Time : 30 mins
Serves : 2
Ingredients :
Spaghetti - 100 gm
Ripe Tomatoes - 200 gm
Butter - 2 tbsp
Chopped Onions - 1/4th cup / 1 small sized
Chopped Garlic - 3 nos
Spinach - a bunch (optional)
Mushroom - 150 gm (optional)
Salt & Pepper for seasoning
Method :
Boil water with some oil and salt. Add spaghetti and cook until done. Strain, add oil to the spaghetti and coat well. This reduces the chances of your spaghetti being sticky. Set aside to cool.
In the same boiling pasta water, add your tomatoes and cook for 30 seconds. Remove them and de-skin. Now, blend into a paste.
In a pan, add oil and saute your finely chopped onions until they are translucent.
Add finely chopped garlic, salt and pepper and saute.
Add your blended tomato paste.
Simmer, cover and let it thicken. For around 10-12 minutes.
After your sauce has thickened, season it.
In a bowl, add your cooked spaghetti and pour over the sauce.
Your spaghetti is ready!
