Roasted Cauliflower & Chickpeas with Green Pea Hummus on Pita

I was going through this Middle Eastern Food only kinda obsession a few weeks back. So I made a lot of things. Hummus, pita, tzatziki, falafel and all such mainstream dishes were made, eaten, enjoyed and a lot of weight was also put on after that. Most of the recipes are already out either on the blog or on my instagram.
This recipe was purely out of 'hmm now that our obsession is over and we have all this leftover food, lets just mix everything and see what happens' !
I know it sounds like too much work but it really isn't. The dish is as tempting as it sounds and looks. I made this recipe because I had some leftover hummus and pita and I didn't want to eat it just like that. I decided to do roasted cauliflower because that was the only vegetable I had at home and that too only half a head (I know). Because we were four people and half a cauliflower wouldn't fill us, I used some leftover chickpeas from the hummus. This recipe is literally made from the leftovers from my kitchen.
As fancy as it looks, it is not very tough. Just the way it is presented really elevates the dish. I am going to mention each and every recipe below and then how to assemble it.
Okay I think I am going to stop talking about my kitchen leftovers and quickly help you make this great dish.

So, let's get started :
PITA BREAD : The recipe is already on the blog.
GREEN PEA HUMMUS :
To make hummus, you will need -
Boiled chickpeas - 250 gm (1 1/2 cups)
Garlic cloves - 4 nos
Cumin powder - 1 tsp
Salt - 1tsp
Curd - 1/8 cup
Ice cubes - 2 to 3 nos
Olive oil - 2 tbsp
Blend everything together until smooth. If it is too thick, add more ice cubes and blend until desired consistency.
Now, add your boiled green peas and blend. Adjust the quantity depending on your taste and colour of the hummus.


ROASTED CAULIFLOWER & CHICKPEAS :
You will need :
1 head cauliflower, cut into small florets
200 gm chickpeas, rinsed and drained
1 tsp chili powder
1 tsp garam masala
oil for drizzling
salt and pepper to taste
Method :
1. Preheat the oven to 200 degrees.
2. Pat the cauliflower and chickpeas dry with paper towels.
3. Arrange in a single layer on a baking sheet.
4. Drizzle with olive oil and sprinkle with spices.
5. Give the pan a gentle shake to sort of mix.
6. Roast for 15-20 minutes, stir, and roast for an additional 15-20 minutes.
7. The cauliflower and chickpeas should be golden brown and the chickpeas will be semi-crunchy.
TIP : Prep your roasted veggies first and put them in the oven. In the meantime you can make your hummus. Making pita is a long process. I'd suggest you buy it if you are too lazy to make the bread. If not pita, you can also use a taco shell, naan, homemade roti, tortilla or any other flatbread of your choice.
ASSEMBLING :
Place your pita bread.
Spread the green pea hummus.
Place your roasted cauliflower and chickpeas.
Top with some thick yogurt.
Garnish with coriander.
Ready!
