Almonds & Cranberry Granola

I love Granola. It's the perfect breakfast for someone like me. The perfect on-the-go sugar kick in the morning. It'll keep you full until lunch and it's a good carb source early in the morning. I have been eating ever since I was in college. It kept me full for a good 5-6 hours until lunch time. Truth be told, now that I make my own money, I can no more afford the expensive Kelloggs Granola that I love. Soooo like every chef, I researched about the recipe and made my very own version of Granola... the way I like it! I have to tell you, being broke and still wanting to eat fancy always brings out the best in me lol xD This is definitely not a first for me. The amount of times I have found a cheaper alternative for something expensive is endlesssss.
The recipe is super simple. You don't need to know the basics of cooking as well. All you really need to know is how to pre heat and set a timer on your oven. That is it.

The base of the recipe remains the same. I love cranberries and almonds so I've added that to my recipe. Add them if you like it too. You can add whatever it is that you like.
If you want to add coconut, mix in the roasted coconut flakes in the granola once they're baked and cooled. Same with choco chips.
If you're using any other nuts, chop or sliver them and add them to your granola mix and bake.
You can also add berries.
STORAGE - Very very important to store granola properly. Make sure you store it in an airtight container and preferably place the container in a cupboard/cabinet in a dry place. If not, the granola will wilt and won't stay crunchy enough for a long time.

ALMONDS & CRANBERRY GRANOLA
Prep Time : 10 mins
Baking Time : 20 mins
Yield : 150 gm
Ingredients :
Oats - 1/2 cup
Dried seeds - 1 tbsp
Honey - 1 tbsp
Coconut oil - 1/2 tbsp
Vanilla essence - 1/4 tsp
Salt - a pinch
Almonds - 10-12 nos
Cranberry - 2 tbsp
Method :
1. Pre heat oven at 180 C.
2. Mix together all the ingredients.
3. Bake for 12 minutes.
4. Remove and give it a good mix. Try to separate the granola from each other.
5. Wait for 10 mins.
6. Bake at 180 C again for 7 more minutes. It should be golden brown and have a crunch.
7. Remove and let it cool.
8. Store properly.
