Gluten Free Vegan Banana Choco Chip Muffins

I made these fluff soft crumb muffins for my Dad on Father's Day. My dad is kind of a health freak and he avoids flour and white sugar as much as possible. I have been working on this recipe for quite a while now and what better day to make it! But honestly, my mum was yelling at me about the overripe bananas since last night too so I really didn't have much of a choice too hahah (iykyk)
Sooo do not throw away over ripe bananas and make these.
Alternatives/Substitutes :
1. If you want to totally avoid sugar, add jaggery powder.
2. If you do not have oat flour, here are some alternatives : almond flour, semolina, whole wheat flour or maida if you don't mind the gluten.
3 If you do not have lemon juice, add 1 tbsp of white vinegar or 2 tbsp of white wine instead. It'll work.
4. I had only peanut butter at home so I added it but you can add any nut butter of your choice.
5. Because this recipe is vegan I have used a plant based milk. But you can use regular milk if you want.

These are too good. Soft, fluffy, moist and the right amount of sugar. To top all that, they're oh so healthy! aaaand if you have any leftovers, you are set for breakfast the next day tooooo.
So, let's get started!
For this recipe, you will need :

3. In a separate bowl, mash bananas.


4. Add peanut butter.


5. Add brown sugar.


6. Add milk.


7. Add lemon juice and vanilla essence.


8. Now mix in the dry ingredients.


9. Fill your muffin tin until 3/4th full and top with choco chips.


10. Bake at 180 C for 20 mins.


GLUTEN FREE VEGAN BANANA CHOCO CHIP MUFFINS
Prep time : 15 mins
Baking time : 20 mins
Total time : 35 mins
Yields : 18 nos
Ingredients :
Oat flour - 200 gm
Cocoa powder - 45 gm
Baking powder - 2 tsp
Baking soda - 1 tsp
Salt - 1/2 tsp
Ripe bananas - 3 medium sized nos.
Peanut butter - 65 gm
Brown sugar - 65 gm
Milk - 120 ml
Vanilla essence - 1 tsp
Lemon juice - 2 tbsp
Method :
1. Pre-heat oven to 180 C.
2. Mix all the dry ingredients together and set aside.
3. In a separate bowl, mash bananas.
4. Add peanut butter and mix well.
5. Add brown sugar and mix.
6. Add milk and combine well.
7. Now add vanilla essence and lemon juice and mix.
8. Fold in the dry mix.
9. Fill the muffin tin until 3/4th full.
10. Top with choco chips.
11. Bake at 180 C for 20 mins or until skewer inserted comes out clean.
12. Let cool.
