Mango Granola Yogurt Parfait


This years summer has been full of mangoes at my house. We tried to make up for all the mangoes we missed last year due to pandemic too. Every time we had only two mangoes left, my dad would order another kilo. It hardly took us 2-3 days to finish them until he had to order another one. I made a lot of desserts this year with mangoes. Not very long ago I had stumbled upon a strawberry parfait recipe but by then it was too late, the season was already over. So I decided to make parfait with mangoes instead.

There's no such thing as an exact recipe for this one.

It makes up for a great and healthy breakfast option! Because I had to put it up on the blog, I had to make it look all fancy and layer them in a glass. On ordinary days, I'd just dump everything in the bowl, mix and eat it! I have still mentioned the method and layering (if you want to fancy it up) below.


Before that here are a few pointers :

1. You can add any granola of your choice. I make my granola at home. Comment below and tell me if I should put the recipe of homemade granola too.

2. You can either use mango pulp or if you like having those little chunks of mangoes in your bowl, cut them into pieces and add.

3. I recommend using thick yogurt. Doesn't have to be hung but also not very loose.

4. Adding chia seeds to the yogurt is completely optional.

5. Add honey in the yogurt depending on the sweetness of your mangoes.

6. Do not make this parfait and leave it overnight. The yogurt will make the granola soggy.

Instead you can leave the chia and yogurt mix in the fridge overnight and assemble it the next day.



MANGO GRANOLA YOGURT PARFAIT


Total Time : 20 mins

Serves : 2


Ingredients :

Mangoes - 2 nos

Chia seeds - 10 gm

Yogurt - 400 gm

Honey - 2 tbsp

Granola - 100 gm


Method :

1. In a bowl, whisk yogurt and honey until smooth. Add in the chia seeds and leave it aside for 15 mins (this step can also be done a night before)

2. Meanwhile, chop or puree mangoes according to your preference.


For assembling - Take your desired mould/glass/bowl. Layer with chopped/pureed mangoes first followed by chia yogurt mix and then granola. Repeat for another layer. Top with some more mangoes.
