Vegan Chickpea Choco Chip Cookies

I've been getting a lot of requests lately to make a healthy vegan choco chip cookie. After a lot of research, I stumbled upon this recipe made from chickpeas. I know it sounds absolutely gross and unbelievable, A CHICKPEA COOKIE!? No, I haven't lost my mind (yet) but you guys asked for it, sooo here it is!
How would I be able to shape them ? How do I substitute these complicated American ingredients with easily available Indian ones ? How do I bake already boiled chickpeas without them getting mashed ? and the biggest question, won't they taste like chickpeas? I had so many questions. So while testing the recipe, I was putting updates on instagram and letting everyone know how I was doing. So many of you helped me by sharing their tips & tricks too. Now, a few things to keep in mind before starting :

The choco chips that I used are vegan. You can use regular choco-chips as well. It's totally upto you.
Before adding dates, soak them in warm water for 15 minutes so that they are easier to blend.
In case you do not have jaggery powder, here are some alternatives - coconut sugar, cane sugar, stevia (use half the mentioned quantity) or erithrytol (quantities might vary). If you don't mind adding sugar, I would recommend adding brown sugar instead of powdered sugar.
Make sure your cookie dough is smooth. It'll be a bit grainy because of the chickpea texture but blend it as smooth as possible. If not, you'll end up tasting the chickpeas in the final product.
The cookie dough has to be chilled for 30 minutes. The firmness of the dough will help you portion and shape the cookies better.
Roll your cookies as thin as possible. Keep the thickness of a subway cookie in mind while rolling them.
Vegan Chickpea Choco Chip Cookies
Prep time : 15 minutes Baking time : 15 minutes Total time : 30 minutes Yields : 18 cookies
Ingredients :
Boiled Chickpeas - 220 gm (1 & 1/4th cup)
Dates - 3 nos
Peanut butter - 1/4 cup
Oats - 1/8 cup
Jaggery Powder - 1/8 cup
Honey - 1/8 cup
Vanilla essence - 1/2 tsp
Choco chips - 1/4 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Method :
Soak dates in warm water for 15 minutes.
Pre-heat oven at 180 C.
In a food processor, add chickpeas, soaked dates, peanut butter, oats, jaggery powder, honey and vanilla essence. Blend to a smooth paste.
Transfer the dough into a bowl, add choco chips, baking powder, baking soda and mix until combined.
Chill the dough in the fridge for 30 mins.
Divide into 18 equal portions, roll into a disc and place on a baking tray lined with parchment paper.
Bake for 15 minutes.
Let the cookies cool.
Your cookies are ready.
