What if I told you I have the perfect guilt free and most yumm Banana Bread recipe? You'll believe me, won't you ? What ? I AM SERIOUS!!!!
The recipe is sugar free and can also be made gluten free. I am also looking for a vegan alternative and I promise as soon as I find it, I won't waste any time. It's coming out the next day. The recipe is simple, not very complicated and doesn't need an electric or stand mixer. A whisk is more than enough for the preparation.
I have to agree, just like y'all I realised the importance of Banana bread during the lockdown. I might have underestimated it a tad bit.
While testing the recipe, the first few times my bread would come out raw even after baking for a good amount of time. After I decreased the quantity of the banana and increased the flour, the recipe started coming together.

Anyways, let's get started!
For this recipe, you will need :

2. In a bowl, mash the ripe bananas.


3. Add the eggs and mix. (substitute - yogurt)


4. Add the peanut butter and vanilla essence, mix.

5. Add the coconut oil and mix.


6. Add flour or oats flour, baking soda, baking powder, salt and cinnamon powder.

7. Gently fold in the dry ingredients until just combined.

8. Pour in tea cake mould. Top with choco chips and/or sliced banana.

9. Bake at 180 C for 45-50 minutes.

Cooking time : 50 minutes
Total time : 1 hour 10 minutes
Weighs 1/2 kg
Ingredients :
Ripe bananas - 2-3 medium sized
Eggs - 1 no. or Yogurt - 1/4 cup
Peanut Butter - 60 gm
Vanilla Essence - 1/2 tbsp
Coconut Oil - 1/8 cup
Flour/ Oats flour - 90 gm (1 cup)
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Cinnamon powder - 1 tsp
Salt - 1/8 tsp
Method:
Preheat oven at 180 C.
In a bowl, mash the ripe bananas.
Add eggs and mix.
Add peanut butter and vanilla essence, mix.
Add coconut oil and mix.
Add the flour, baking soda, baking powder, cinnamon powder and salt.
Fold in the dry ingredients and combine gently.
Pour in tea cake mould. Top with choco chips and/or sliced banana.
Bake for 50 minutes or until a toothpick inserted comes out clean.
Let cool, slice and serve.
