This fresh, fruity and healthy salad is my summer favourite. Super easy to make and literally requires no cooking (a little chopping though).
Watermelon during the summer is the best. The sweetest, juiciest and cheapest fruit available in the market. I am not really a huge fan of feta cheese, but when it is paired with watermelon it stands out from the crowd!
There are a lot of variations to the salad. Most of them are with arugula, cucumber and/or walnuts. As for me, I like it the simple way. Isn't the watermelon and mint a headache enough to chop already? Yeah go ahead and judge, call me lazy and I still won't chop anything other than those two things.
Total Time : 20 minutes
Serves : 6
Ingredients :
Watermelon - 1/2 medium sized
Feta cheese - 2/3 cup or 100 gm
Lemon juice - 2 tbsp
Salad oil - 2 tbsp
Mint Leaves - 20 nos
Salt & Pepper - to taste
Method :
Cut the watermelon into cubes
Add in the lemon juice, chopped mint leaves, salad oil, season and toss.
Crumble feta cheese and add in the salad. Toss.
Garnish with mint leaves.
Serve.

Isn't it super quick and easy?
Make it right now, send me pictures and tell me if you like it!

What is salad oil? Is it olive oil ?
